Just south of Shantawane village, the Ayla washing station sits along a river that cools the air and enhances drying. Here, 725 growers deliver their cherries, which are depulped within hours, fermented for 36–48 hours, then washed in clear running water. The coffee dries slowly on raised beds under shade nets before resting in a nearby warehouse.

Owned by Testi Trading and operated by the Yonis family, Ayla has produced exceptional coffees since 2015. Through Project Direct, they’ve reinvested in their community—building schools, including the first high school in Hamasho, Sidama.
