Carlos Pola is a third-generation Salvadoran coffee producer who blends family heritage with data-driven innovation. After an early career in textiles, where he honed skills in quality control and process management, he purchased Finca Las Brisas in 1997 and transitioned fully to coffee by 2012. Today he manages three family farms established in the early 1900s—Finca San Antonio, Finca Las Brisas, and Finca San Roque—in Santa Ana at roughly 1,400 meters, where volcanic soils and cool microclimates support exceptional arabica.

Pola’s approach centers on regenerative agriculture and transparent quality improvement. He practices water stewardship through natural and experimental fermentation, while multi-line plantings of Pacas, Pacamara, Parainema, and 20+ experimental hybrids strengthen biodiversity and enable precise micro-lot differentiation. Worker education and open knowledge-sharing with neighboring producers extend his impact across the region.
Finca San Antonio’s signature is its natural-processed Pacamara—a Salvadoran hybrid prized for bold structure and high-elevation clarity. Through meticulous cherry selection and slow drying on shaded raised beds, Pola produces a vibrant, fruit-forward cup with blackberry, tropical fruit, caramelized sweetness, and a chocolate-hazelnut finish—showcasing Pacamara’s potential while advancing the global reputation of Salvadoran specialty coffee.
