Purple Haze is a rare experimental Caturra grown at Pedronel Ospina's Finca Sicilia in Quindío and processed at Edwin Noreña's Campo Hermoso lab. After carbonic maceration, the mosto (juice drawn off the fermenting cherries) was cultured with yeast and rose apple, then dosed back onto those same cherries, now pulped to black honey: skin removed, mucilage intact. Ten days of greenhouse sun-drying locked it all in. Grape soda sweetness, rose water lift, dark blackberry depth.
Amazing as espresso, in milk, or as filter.
