The Flores family, sixth-generation coffee growers, cultivate their 7-hectare La Esmeralda farm in Poás, Alajuela. Dedicated to specialty coffee since the 1980s, they process cherries at their family mill for refined quality. After pulping, the coffee rests for two days on African beds, lightly fermenting before sun-drying for 14 days with regular turning. Once dried to 10.5% humidity, it rests in parchment for two months, then is carefully sorted by weight, size, density, and color.
