The Finca Fátima Natural HG 2025 comes from a historic family-run estate in Coatepec, Veracruz, where coffee has been cultivated for generations at elevations of roughly 1,200–1,350 meters. Carefully hand-harvested ripe cherries are processed using the natural method, drying whole in the fruit to allow sugars and fruit character to slowly infuse the seed. Throughout drying, the team closely manages airflow, temperature, and timing to ensure even fermentation and stability while preserving clarity. Once the cherries reach a stable moisture level, the coffee is rested and prepared for export. The result is a fruit-forward yet balanced cup, showcasing the expressive side of Veracruz terroir with a rounded body, gentle acidity, and layered sweetness—an approachable natural that reflects both thoughtful processing and long-standing farm stewardship.
