The Huke washing station receives cherries from more than 600 growers in the Gotiti kebele. For this premium natural coffee, cherries are hand-sorted on arrival, then floated in water to separate by density. After rinsing, they are dried on raised beds in 5 cm layers, turned 5–6 times daily for even sun exposure. Over 15–21 days, the cherries reach a stable moisture content of 11–12% before being moved to a warehouse for homogenization and storage prior to milling.
Owned by Testi Trading and operated by the Yonis family, the Huke station exemplifies both quality and community. We’ve partnered with Faysel Yonis since 2015, and his coffees never disappoint. Through Project Direct, Testi has built multiple primary schools and even the first high school in Hamasho, Sidama, creating lasting impact alongside exceptional coffee.
