Ethiopia Sidama Ayla Bombe Natural

The Ayla washing station, nestled just south of Shantawane village, is surrounded by a river that naturally cools the air and enhances airflow across its drying beds. This unique environment, combined with careful processing, produces coffees of exceptional clarity and sweetness. Over 725 dedicated growers deliver their harvest to Ayla, where the cherries undergo meticulous sorting—first by hand to remove underripes, then through flotation to separate out light “floaters.”
From there, the fruit is spread on raised beds and turned at least five times daily, ensuring even drying over 15 to 21 days, depending on the weather. The result is a beautifully clean and expressive natural process coffee.
Owned by Testi Trading and run by the Yonis family, the Ayla station is more than a processing site—it is part of a broader commitment to community. Through their Project Direct initiatives, Testi has built multiple primary schools and even the first high school in Hamasho, Sidama.
