About this coffee:
A honey-processed Pacas, a variety native to El Salvador and representing about a quarter of national production, grown at Finca Las Brisas in the Santa Ana highlands at roughly 1,400 m. Strict cherry selection and careful pulping ahead of drying on shaded raised beds lower water use while shaping a distinctive cup. In the cup, notes of nuts, cotton candy, and tropical fruit, with a creamy, rounded mouthfeel, soft sweetness, gentle acidity, and a lingering finish.

Where it was grown:
Finca San Antonio is one of three legacy farms — alongside Finca Las Brisas and Finca San Roque — that Carlos Pola manages in Santa Ana, El Salvador, at roughly 1,400 m. Established by his family in the early 1900s, the farms sit in a region known for fertile volcanic soils and cool microclimates ideal for high-quality arabica. Pola's approach centers on regenerative agriculture and environmental efficiency: he addresses regional water scarcity by reducing dependence on washed processing and investing in honey, natural, and experimental fermentation techniques. The farms maintain biodiversity through multi-line plantings of Pacas, Pacamara, Parainema, and more than 20 experimental hybrids, improving genetic resilience and micro-lot differentiation.

About the producer/farmer:
Carlos Pola is a third-generation Salvadoran coffee producer whose work blends family heritage with data-driven innovation. Though raised among the coffee farms of western El Salvador, his early career was in the textile industry, where he developed expertise in quality control and efficient process management. In 1997, he purchased Finca Las Brisas, and by 2012 he transitioned fully into coffee, today managing all three family farms.  Worker education, community support, and open sharing of specialty practices with neighboring producers extend his impact beyond his own farms, delivering transparent, measurable improvements in quality, sustainability, and community resilience across the wider region.
