Colombia Campo Hermoso Sidra Washed

Cherries from Finca Campo Hermoso are harvested at peak ripeness, above 24° brix, then soaked for four hours to clean the fruit, remove floaters, and hydrate the cherries. They are placed in an anaerobic environment for carbonic maceration before being depulped and given a final washed process.

Finca Campo Hermoso has been in Edwin Noreña’s family for over 30 years. After his father’s passing, Edwin transformed the farm into a leader in Colombian specialty coffee. A Q Grader, Q Processor, and Cup of Excellence judge, he is recognized for his innovative approach to coffee processing.

We began sourcing Edwin’s coffees in 2024, and Campo Hermoso has since become a hub for research and development in experimental fermentation. The insights gained here are shared across Santuario Project farms in Costa Rica, Mexico, and Brazil, further advancing the quality and innovation of specialty coffee.
