The area around Buku Sayisa is renowned for producing certified organic coffee, a rarity due to the high costs of official certification. While most Ethiopian farmers naturally practice organic farming, few pursue the formal certification process.

Buku Sayisa, located in West Guji, is a washing station that specializes in natural processing. Ripe, sorted cherries from farms at an altitude of 2,300 masl are dried for 12 to 15 days on raised beds. By meticulously avoiding over fermentation during the drying process, Buku Sayisa producers craft elegant cup profiles like this G1 coffee with flavor notes of blueberry, honeydew, and jasmine honeysuckle, resulting in a sweet and sugary taste.

Blind Assessment

Crisply fruit-toned, gently wood-framed. Dried blueberry, cocoa powder, fresh-cut fir, orange zest, marjoram in aroma and cup. Briskly sweet acidity; very full, satiny mouthfeel. Wood-framed finish supported by notes of cocoa powder and orange zest.

Notes
Produced by smallholding farmers, entirely of local landrace varieties of Arabica, and processed by the natural method (dried in the whole fruit). Bear Lake Coffee Co., a B Corp-certified coffeehouse and roastery located in Barronett, Wisconsin, is committed to sustainability through its Coffee with a Purposeā„¢ initiative, which ensures that farmers receive compensation well above the Fairtrade Premium for their exceptional small-batch coffee
Bottom Line
A berry-forward natural Ethiopia with cocoa underpinnings and rich aromatic wood notes throughout the profile.
