We hope you enjoy the exquisite flavors of this single-origin coffee—a beautiful Anaerobic Pacas variety from Carlos Pola at Finca Las Brisas.

Grown at 1,400 meters and farmed with regenerative practices, this coffee offers distinct notes of Sweet Nectarine, Honey, and a Fruit/Floral Medley.

Anaerobic Process:  After handpicking and carefully sorting the cherries, they are placed in sealed fermentation tanks without oxygen for 72 hours, with CO₂ released through a one-way valve. Following fermentation, the coffee dries intact (dry process) on raised beds for 2–3 weeks, using partial sun and airflow, and is stirred often for even drying.

This microlot is a rare treat and won’t be available for long! Carlos and Patty Pola are committed to regenerative farming—improving soil health, sequestering carbon, and creating a positive impact for both the environment and their community, truly striving to “save the planet one cup at a time.”
