.Finca Colomba has been stewarded by the Adolfo family for three generations. The story begins in 1949, when Don Adolfo McEntee inherited two properties on the slopes of the Santa Ana Volcano, in the Cordillera de Llamatepec. He planted the first Bourbon trees at Finca Colomba and neighboring Finca San Francisco, establishing a legacy that would carry forward through his son, José Adolfo McEntee Batlle, and later his grandson, “Fofo.”

During El Salvador’s civil war, José Adolfo was kidnapped twice and ultimately emigrated to Miami with his son, entrusting farm management to long-time family friend Mario Valiente of Finca Calera. In 2014, Mario built Colomba’s on-site dry mill, allowing the farm full control of quality from harvest through export. Today, a team of 10 women—each the head of her household—conducts the final hand-sorting to ensure exceptional cup quality.

Finca Colomba cultivates a diverse range of varieties, including Yellow and Red Caturra, Sanpacho, Gesha, Pacas, Cuscatleco, Red and Pink Bourbon, and newly planted Kenyan selections. The farm’s rich volcanic soil and elevations above 1,500 masl create ideal conditions for slow, complex maturation.

At the wet mill, Mario leads an expansive processing program featuring carbonic maceration, anaerobic naturals, honey processes, fully washed, semi-washed, and traditional naturals. Each lot is cupped, scored, and stored according to its performance.

Finca Colomba employs 80 permanent workers and up to 210 seasonal pickers from nearby communities. Beyond coffee, the farm supports local schools, hosts medical clinics, and distributes Christmas gifts to children—reflecting a long-standing commitment to social impact.
