"Sunday Drive" is a rare experimental coffee processed at Edwin Noreña's Campo Hermoso R&D Center in Quindío, Colombia. Most carbonic coffees are done in days. This one took the scenic route. Cherries picked above 18° Brix were soaked, sorted, and rested 24 hours in low oxygen before 160 hours of carbonic maceration in a 40°C bioreactor. Depulped to black honey, they were inoculated for 72 hours with a native yeast from the same variety. Fifteen days of controlled greenhouse sun-drying set the finish. Hibiscus tartness, Earl Grey florals, juicy lychee sweetness. Enjoy the ride and take the long way home.
