Colombia Caturra Black Honey Experimental

"Purple Haze" is a rare experimental Caturra grown at Pedronel Ospina's Finca Sicilia in Quindío, Colombia, processed at Edwin Noreña's Campo Hermoso lab. Most black honeys go straight from pulper to drying bed. This one took a detour. After carbonic maceration, the juice the cherries released, called mosto, was cultured with yeast and rose apple. The cherries were pulped to black honey, skin off and mucilage intact, and the mosto was dosed back over them. Ten days of greenhouse sun-drying locked it all in. Grape soda sweetness, rose water lift, dark blackberry depth. Purple from first sip to last.

Amazing as espresso, in milk, or as filter.
