Fresh off the water and long awaited lands our newest Premium Ethiopian G1 Lots. This meticulous premium lot is hand sorted before receiving to the Testi Washing Station owned by the Yonis family. After hand-selecting, the cherries are then floated in water to further separate by density. After initial separation, rinsed cherries are laid out to dry on raised beds in layers 5cm thick. The washing station team turns these cherries 5 to 6 times per day to ensure even sun exposure and rate of drying. This daily attention continues for 15 to 21 days, until the cherry pods reach 11 to 12% moisture content. Once dried, the coffee is moved into a nearby warehouse for final homogenization and storage until the coffee is milled.

The cup does not disappointed, and drives our pallet towards those long sought after flavors Premium Ethiopians are known for.

Fragrance of tropical fruit, aroma of blueberry and chocolate. Deep flavors of grape, cherry, prune and florals with an aftertaste of blood orange, lime and raspberry. Citric and malic acidity with a medium-heavy body and creamy mouthfeel. Roasted light to protect the sweetness and balance, this cup is a 10/10.

Sweet-toned, richly chocolaty. Blueberry, cashew, dark chocolate, lemon verbena, sassafras in aroma and cup. Citrusy acidity; plush, creamy mouthfeel. Finish consolidates to notes of blueberry and dark chocolate.

Produced by smallholding farmers, from local landrace varieties of Arabica, and processed by the natural method (dried in the whole fruit). Great coffee, although the bag zipper broke on 2/3 bags we ordered which made sealing the bag impossible.
